I served this with roasted rack of lamb and it was the perfect offset to the lamb and mint sauce. The potato skins also created a nice, slightly rustic, touch to the plate. Just as important, since it was a side dish for the second course of a sit down dinner and needed to be prepared quickly while the guests were at the table, the easiness of it earned a sixth star that doesn't show up on the rating.

These are awesome!! Made a big batch for a cookout and everyone loved them. Used about 30 medium-small red potatoes (just over half a 10lb bag from Costco) with skins on and 10ish cloves of peeled and lightly *chopped* garlic in the water to boil (never took the garlic out before mashing and never found a chunk either -- guess it softened up and got mashed too). Once boiling, they only took about 20min to be plenty soft, and also skins started to lose red color. I used a little less than 1/4 cup butter (less than called for), about 4 tsp of salt, several big shakes of dried oregano, rosemary, basil and pepper, and they were awesome. I also used [plain] Silk for milk and couldn't tell at all. Mashed them at this point, but not too much -- wanted it a little chunky. Also used 1 cup of grated Dubliner grass-fed cheese (another Costco item in our house) instead of parm and it was great. Not to strong or too subtle. Everyone loved them!!! My husband especially. ;)

This is a delicious, easy recipe for red potatoes. A great change from regular mashed potatoes. I followed the instructions, except I did add some sour cream and used 2% milk, as well as ground black pepper. They were wonderful. Now a favourite side for almost any dish.

Good, next time I'll try additional butter, a little sour cream and use red potatoes - all I had on hand were Idaho. Know the texture and flavor is always better with creamers with the skins on.

Love these! So easy to make. We love garlic so I added a few more garlic gloves. Doubled the parmesian and added garlic powder, onion powder, pepper.

Just got done making this tonight. It was bland making the recipe as is, so I ended up adding some fresh minced garlic, garlic salt & garlic powder. I couldn't taste the garlic at all before I added those (& I even tripled the garlic cloves that I boiled with that potatoes!)!!! & I couldn't even taste the parmesan cheese. I will make again but only with my changes & a little more parmesan!

These garlic mashed potatoes were very good. A nice change from the cream cheese mashers I usually make. I left the skins on. Served this up with tri-tip and sauteed peppers & onions. I saved the recipe and will make them again.
