LOVEd this pie! We had a box of apricots from our co op that we needed to use and this was a perfect choice! Was kind of confused about whether to use 1 pie crust or 2.. picture shows no top crust, but instructions say to do a lattice across the top with 2nd crust. I only had one, so I rolled it out thin and did a bit of lattice. I cut back on the sugar a big and loved the tartness of this pie. Serve with fresh whipping cream and it's the best dessert ever!!

This pie was super easy to make, and I did as others and added a bit of cinnamon. I liked the outcome, but it was a bit too tart for my tastes. Will try again with adjustments.

Hands down the best pie I have ever made. I baked my own crust and it came out just perfectly. I also used fresh nutmeg which I consider a must. My family is begging me to make another one! So good I even posted a pic. :)

Great simple recipe! I added 3 tbs. tapioca flour and substituted cinnamon. The lattice is great for apricots. Beautiful pie! I'll make it again.

Wonderful flavor - I did find it to be a bit runny though - i think i will add a bit of cornstarch next time and possibly some mangoes for variety. I love apricots and this was a perfect use for a batch that i purchased that ended up a tad on the tart side. Many thanks for posting this!

If I could give it 6 stars I would. I was fortunate enough to have some beautiful organic apricots to use and the combination of sweet and tart was killer.
