I loved these pancakes! I changed it a bit to make it vegan: coconut oil instead of butter, almond milk instead of milk and a little bit if ground chia seeds in water instead of egg (if you let the seeds and water sit for awhile it turns gelatinous, very much like eggs:). I also added vanilla and cinnamon as others had. They were still very delicious but if you'd like to try this, please note that the use of coconut oil, almond milk and vanilla make it a very rich pancake already, needing very little syrup. I topped with jam. Would also be good with fresh or frozen berries! Yum!
