Based on other reviews I changed things a little. I used 1 tbsp chili powder, 1/2 tbsp cumin, and the oregano. I added the spices to the onions and garlic just before I added the tomatoes so that the spices could toast a little. I used a box of chicken stock and 2 cups of fire roasted corn from Trader Joe's and skipped the hominy. I let it simmer together for about 20-30 minutes then added pre cooked pollo asada and the can of rinsed beans. To finish it off, I squeezed about half a lemon into it and stirred in a handful of chopped cillantro. Topped with reduced fat cheddar cheese and a little diced avacado. Super good! It's also weight watchers friendly at about 11 pps per bowl with the cheese and avacado.
