This is one of my favorite recipes I've made this year. I kept all the spices and ratios the same, but I made a couple changes to make this easier and faster.
I used chicken breast since that was all I had, and simmered it until cooked in chicken broth. I then shredded the chicken, added the spices and veggies (minus the potatoes because as others have said it doesn't need more carbs), then simmered for another 20 minutes. Then I added and cooked the dumplings.
This was SO GOOD and SO EASY. And the leftovers are absolutely fantastic! Note, it was looking a little bit thin and soupy, but the addition of the dumplings thickens up the sauce very nicely.
