Marvelous recipe ... I've made many a caramel but this was a sure fire tasty recipe. My in Laws are allergic to nuts but love pine nuts so I toasted them and added them to the mix. They came turned out beautifully!

I love the taste of these caramels but I couldn't get them to set up. They ended up being little pools of caramel that still tasted delicious, but couldn't be given as gifts. I coated mine in tempered chocolate and sprinkled them with sea salt and they were divine, just not pretty.

I only gave this 4 stars due to its technical difficulty. Caramel is hard to make! I made a batch of this for a fried who loves caramels. Nothing you buy in the store compares to them; they were so creamy and smooth and super delicious - melt in your mouth. One batch made a LOT of 1x1 caramels. I, like many others, did not cook it quite long enough, so they were a bit soft. We had to keep them in the fridge, but they were delicious. I put them in my morning coffee...yum.

These were delicious, but VERY time consuming to make. I recommend having a second person available to help you stir--my arm got tired. I am sure it is mentioned somewhere, but watch how long you leave them to harden before you cut them up. I waited too long and it was difficult and time consuming to cut them up.

Since I had never made caramel before, I (and everyone I know) were very nervous. I followed every direction perfectly, and the results were fantastic! My family, who are big fans of caramel and have tried some from every candy store they've ever visited, said this was some of the best they have tasted! I get a request from my brother to make this again at least once a day! It was fabulous! I can't wait to make more!

It takes awhile to get it to the right temperature. Don't rush it or it will burn!

This was the first recipe I tried for caramels and it was perfect! I did add a little salt to mine becaue it adds even more flavor.
