This spanish rice is straight up comfort food! It is super easy to make, DELICIOUS, and it makes great leftovers, so you can enjoy it for days. I originally made it to accompany chicken fajitas, though it is great on it's own (or mixed with a little sour cream and cheddar cheese), on a taco salad, or in burritos. My husband, who is the pickiest eater I know, LOVES it. I make it several times a month and it comes out perfectly every time. I would make it more often, but I fear I might eat the whole batch and supersize myself! I like to sneak extra veggies into everything I make, so with this I use a whole onion and at least one bell pepper. Other things I will likely try in the future include corn, celery, carrots, or peas. I might even get away with some chopped up cauliflower. I also like the idea of using brown rice to "healthy it up" a little bit. We'll see if my hubbie even notices... Enjoy :)
