needed this for a Mexican night dinner, on a hot summer night! It was great and so easy! I did make a few changes, I only used 1 cup of rice and used canned 15.5 chicken broth and a can of rotel tomatoes with green chili peppers. also one whole small onion. this is a keeper!

I needed a side for the Spicey Lime Grilled Chicken and didn't have a quick package rice so I made this since I had the ingredients on hand. Didn't change a thing. It was delicious and my company agreed. It is now a keeper in my recipe box.

First let me say that I misread the recipe and added two cans of chicken broth instead of two cups. But even with that mistake, this dish was wonderful. All of the broth was absorbed by the rice and the texture of the dish was excellent. My kids, who will not even take a bite of a Spanish rice out of a box...gobbled this up. I will definitely make again and with 2 cans of chicken broth.

I'm Mexican and this is often my go to Mexican rice dish because it's so easy. I do know how to make it from scratch with my family's recipe, but this is fool proof and is quicker and easier to make. NOTE: I've made this with green salsa in place of the red salsa and it tasted equally good.
