I used walnuts instead of pecans and pan roasted them then added butter and two cloves of fresh garlic before adding the zucchini.

So simple. I added some carrots and squash that I had on hand and instead of pecans used honey roasted peanuts, chopped. It was a delicious combination of salt and sweet.

I really enjoyed this. My husband thought it was a little bland. I used chopped garlic from a jar. I also added more pecans. His only complaint that it was too bland. I am sure if I use butter instead of oil he will like it a whole bunch more.

What a great, healthy alternative to fried zucchini. My entire family loved this zucchini dish. If you wish to be more health conscious eliminate the olive/vegetable oil and lightly coat the zucchini with a 0 calorie butter flavored cooking spray. For a more fresh, flavorful appeal saute with fresh minced garlic or ginger. Lastly, toast any raw nut that you love almonds, pecans or cashews they all taste great coupled with the zucchini.

This was a nice new take on zucchini. The pecans added a tasty extra element. Even my 2-year-old liked it, asking for "More keeny."
