Zucchini in Sour Cream Sauce

INGREDIENTS
3 cups cubed unpeeled zucchini
1/4 cup water
2 tablespoons chopped onion
1/2 teaspoon salt
1/2 teaspoon chicken bouillon granules
1/4 teaspoon dill weed
1 tablespoon butter
1 teaspoon sugar
1/2 teaspoon lemon juice
1/4 cup reduced-fat sour cream
1 tablespoon all-purpose flour

DIRECTIONS
In a saucepan, combine the zucchini, water, onion, salt, bouillon and dill. Bring to a boil. Reduce heat; cover and simmer for 5 minutes or until zucchini is tender. Remove from heat and stir in the butter, sugar and lemon juice. Combine sour cream and flour until smooth. Gradually add to saucepan. Cook and stir over low heat for 5-7 minutes or until thickened.

Nutritional Analysis: One serving (1/4 cup) equals 50 calories, 3 g fat (2 g saturated fat), 9 mg cholesterol, 320 mg sodium, 5 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

this was divine! i had plain yogurt that i used instead of sour cream, and i cooked the onion with quorn tenders (a fake chicken product) before adding it to the zucchini mix. also added pepper. served with corn muffins. yum yum! would make a great wrap too, if we had any leftovers!

I made this sauce and served it with peas and steamed new potatoes. I was in a pinch and looking for a quick side dish with and empty fridge and empty pantry. This was so yummy!

Oh WOW!! This is awesome! 6 servings, huh? Is it wrong that I ate all of it? Hum.... oh well - at least I got in all my daily recommended veggies for the day in one shot! Really though I would say it was more like 3-4 servings than 6. Would be great on top of some angel hair pasta with some halved grape tomatoes!! Or slice the zucchini diffrently and throw it all on top of some chicken! I am getting way to excited here .... I added garlic (I cook EVERYTHING with garlic!) and I only had boullion cubes, so I just tossed an entire cube in there. This is just SOOOOO good and so many posibilities!!!.........

I liked this, my 4 yr old did too. I had to use up some sour cream. Made this along with the sherry sour cream chicken and some basmati rice. Yep a bit on the creamy side, but well it was mmmmmm mmmmm GOOD! Try it!
