Zucchini Galore

Yummy sauteed zucchini with other veggies you can find in your fridge!! Very tasty and healthy!! I sometimes add a drop of wine to give it a little more taste. Note: you can add as many vegetables as you like, but this dish can also be tossed in with pasta, if tossing with pasta, just add a lot more olive oil.

Quick, easy and very good. I always make it as an appetizer for barbecues at home. Melted Cheddar cheese provides a wonderful, simple topping for the sauteed zucchini slices.

This is just like Nonni used to make! Fresh zucchini, onions, and tomatoes sauteed with Italian seasonings make a perfect complement to any meal. Serve alone or over rice.

Thick zucchini slices are lightly browned in butter and cooked with soy sauce and sesame seeds. This makes a fabulous summer side dish!
