Zucchini Patties

Get out your grater or food processor, you'll need to grate up a bunch of zucchini. But this is what makes these patties fry up so wonderfully. A nice change from potato pancakes. Serve with a bit of tomato sauce or sour cream dabbed on top.

Zucchini are hollowed out and filled with a saute of onions, mushrooms, chick peas, lemon juice, herbs and spices. 

Italian Stuffed Zucchini

This is fun and so pretty as a side dish. Scoop out zucchini halves and stuff them with Parmesan cheese, pasta sauce and bread crumbs. Bake with a sprinkling of mozzarella cheese. Quite good.

Zucchini Cakes

Shredded zucchini combined with bread crumbs, egg, mayonnaise, mustard and Old Bay Seasoning, and formed into patties and baked. The flavor of the Old Bay with the texture of the zucchini makes a great substitution for crab cakes.
