We like this one because it looks so pretty with dabs of green zucchini, yellow corn and red tomato. These veggies are folded into a buttermilk batter and baked with cheese and egg. Great zucchini treat, anytime.

Zucchini and summer squash are baked together in a quiche-like vegetable pie. Topped with slices of tomato and Parmesan cheese, this one's a winner! It's a simple, easy to make recipe that is excellent in the summer when the veggies are fresh. Served with a salad, it's a yummy and healthy dinner!

Peggy Gandy of South Amboy, New Jersey makes the most of her zucchini harvest by baking this crowd-pleasing entree. The golden-brown pies slice so beautifully you can serve them to company! At 31 cents a serving, they're great for entertaining on a budget.

A little like a quiche, a little like a pie--and the best part of both. Parmesan cheese adds extra richness.

A nice side dish with practically no fat or calories that will go with any meal except a tomato-based one. If you like, you can add diced bell peppers to this dish too. Serve hot in a small cruel dish.

A great way to use up all those extra fresh tomatoes and zucchini from the garden during late summer. My family loves this soup! If you like, this soup can be thinned with a little bit of milk or cream.
