Zucchini Tomato Casserole

INGREDIENTS
6 medium zucchini, diced
4 tablespoons butter or margarine, melted
2 medium tomatoes, diced
1 cup shredded Cheddar cheese
1 cup cubed process cheese (Velveeta)
1 cup soft bread crumbs
2 eggs, beaten
2 tablespoons dried minced onion
1 tablespoon dried parsley flakes
1 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper

DIRECTIONS
In a large skillet, saute zucchini in 2 tablespoons butter until crisp-tender; drain well. In a bowl, combine the remaining ingredients. Stir in the zucchini and remaining butter. Transfer to an ungreased 2-qt. baking dish. Bake, uncovered, at 350 degrees F for 25-30 minutes or until bubbly. Let stand for 10 minutes before serving.

Oh, My God!!!! This recipe was the best! I can't believe this one had no rating yet. My whole family absolutely loved it. I opted not to sautee the zucchini first. I like vegetables to be crispy crunchy, and also instead of the instant onions, i used diced fresh onion.That was a really great idea, the onion really added to the taste of all the vegetables. I will most definately make this recipe many many times over. My kids will grow up remembering this one for sure!! Thanks for submitting it.

MADE THIS RECIPE WITH FRESH TOMATOES,SQUASH,ZUCCHINI,ONION, AND BASIL FROM MY GARDEN. THE FLAVORS WERE WONDERFUL!! WILL DEFINITELY BE MAKING THIS AGAIN AND AGAIN.

I MADE IT FOR DINNER LAST NIGHT AND FOUND IT TO BE A DEFINTE KEEPER.THE ONLY THING I DID DIFERENT WAS USE FRESH ONION. WILL MAKE AGAIN, OVER AND OVER AS WE LOVE ZUCCHINI. GREAT RECIPE.
