This was a great basic recipe, but i changed it a bit. I made a much smaller amount (cooking for two) and used equal amounts zucchini, mushroom, and onion. I also used 3 large garlic cloves because we love garlic here and a pinch of red pepper flakes. Next time I will be leaving out the tomatoes. They just seemed to water down the flavour without adding anything interesting to the dish.
