This version of this tasty pie has a bit more texture. The cooked zucchini is folded into a mixture of flour, cream of tartar, sugar, cinnamon, lemon juice, and nutmeg. The filling is then piled into a prepared pie crust and fitted with a top crust. Slip it into a hot oven to bake for an hour.

No one will ever guess that this creamy, sweet dessert is made with a vegetable. Cooked zucchini is blended with sugar, evaporated milk, eggs, flour, margarine and vanilla. The filling is poured into a prepared crust, sprinkled with nutmeg and baked until set.

Cooked zucchini is pureed with evaporated milk, sugar, egg, flour, margarine and vanilla. This custard-like filling is poured into an unbaked pie shell, sprinkled with cinnamon and nutmeg, and baked until set.

Everyone will think there's apple in this delicious pie, but there really isn't. Peeled, sliced zucchini are sauteed in lemon juice until just tender, and then it 's combined with all the usual apple pie fixings: sugar, cinnamon, brown sugar, nutmeg and flour. The filling is piled into a pastry crust, dotted with butter and topped with a second crust. It bakes for about 40 minutes.

We like this one because it looks so pretty with dabs of green zucchini, yellow corn and red tomato. These veggies are folded into a buttermilk batter and baked with cheese and egg. Great zucchini treat, anytime.
