Great recipe! My kids loved that Mom was making "zucchini pancakes!" They have good cheesy flavor like a garlic cheese biscuit sort of. I didn't have any problem with the moisture and didn't drain it at all. I did add a bit of garlic powder, some parsley, black pepper, and some Italian seasoning and they were SCRUMPTIOUS!! I enjoyed eating them all by themselves, but I bet they would be great with marinara sauce, too. We made these a 2nd time with shredded zucchini that I froze in summer when I had too much to use. As the frozen zucchini thawed, there was a lot of liquid, and I did drain that off before adding to the recipe. (I froze 3 cups and ended up with only 2 cups after draining, so it was perfect amount for this recipe!) This time around I forgot the garlic, and while they were still pretty tasty, I missed the garlic.
