I would give this 6 stars if I could! My husband who claims to hate zucchini inhaled these. I made them exactly as the recipe said and they were fantastic!!! I can't wait to make them again...

Fantastic! I have a toddler so making dinner quickly is a must. These are so simple and only took me about 20 minutes from start to finish. At first I followed the recipe exactly, then the next day I doctored them up. I added garlic, cold cut ham and chopped turkey kielbasa and wow! I will use the recipe over and over again!

These are soooo yummy!!!!!! I only used 1/4 cup of parm. cheese to cut down on the fat, and they were still amazing..... I also did NOT use butter. Just Pam. We dipped them in reduced fat sour cream when they were done..... Boy these were amazing!!!!! I think I'm going to make them again tomorrow, this time with Yellow zucchini! You have to try this one, healthy and sooo delicious!!

These were excellent! I was looking for a way to use some zucchini that we had, and this was a great recipe. I followed it exactly, except that I didn't have any onions, so I used some onion powder. My children loved it, although I wouldn't tell them what was in it.

This is really good. I just threw it together and it came out awesome. My six year old likes it. Added some basil and thought of other additions as well-garlic minced, red peppers,any other seasoning that you like to change it up a bit. Mmmmm will make again!

These pancakes were very tasty. I added 1/2 tsp. garlic powder 1/2 tsp. cumin 1/4 tsp basil and a pinch or two of cayenne pepper. Also instead of using 1 1/2 cup of shredded zucchini I used 1 cup of zucchini and 1/2 cup of shredded carrots.The cheese I used 1/4 cup parmesan and 1/4 cup shredded swiss cheese and 1tbsp. chopped red onion 1tbsp chopped green onion. Very flavorful and a great side dish.

i made these yesterday, my familly loved them even though it tastes salty (my fault) it was good, but it was soft, it was easily broken when i tranfer them to another dish.

These were more like fritters...or zucchini patties than pancakes. I used 1-1/2 teaspoons fresh oregano and 1/2 teaspoon each of garlic powder and cumin. Absolutely delicious for a high summer supper served with fresh tomatoes and green beans!
