The carrots and zucchini were overcooked and the onions were just barely cooked enough. I will cut the onions into pieces, not rings, next time and cook them first. Then the carrots and add the onions abck in with the zucchini. My husband liked this recipe better than I did.

Yummy! Cut the carrots a little too thick so it took longer, but otherwise would definitely make again. Try adding the basil a little at a time. I found 2 tsp. to be too much.

We had this with dinner tonight and it was a hit with both adults and children - not a bite left. I think the basil is perfect in this dish. Thanks for a delicious, healthy recipe!
