I read alot of reviews..and did bump up the spice level and certainly the garlic level. Used every bit of the cheese noted in the recipe..sorry..this was bland..very bland. I salted and peppered several times..the old building of flavors. I really expected something tasty..but it was not to be. It was a stomach filler for sure...brown rice is the best..but I won't be making this again. I'll try something that involves roasting veggies first then adding rice..brussel spouts come to mind...hmmmmmm,

Very good! I used brown rice and canned tomatoes and it was excellent. Even my 1 1/2 yr old like it!

Colorful, but lacking in taste. Vegetarian friend liked it. I roasted the veggies before assembling to intensify flavor.

This was wonderful. Great way to use up garden veggies. I used a blend of zucchini, eggplant, green pepper and onion. Double spices as recommended and used half the cheese. It was very cheesy...can't imagine using the full 2 cups. I also doubled the rice. Fantastic! Thanks, Debi!

Very good! Meat-loving hubby loved it and is taking leftovers to work tomorrow with some diced chicken in it. I followed the recipe except I used fresh basil and packaged saffron rice. It was a bit runny but I was in a hurry and didn't de-seed the tomatoes as well as I could have. A great way to use up garden veggies. Will definitely make this again.

Delicious! The tripled spices (as suggested) were perfect. Used a mixture of cheeses on hand. I added red peppers, mushrooms, and red onions. Will repeat often!

I don't remember if I've reviewed this or not, but it was wonderful. My husband will actually eat zucchini, if it's served to him in this dish. I have changed a couple of things: I make brown rice, and I make more of it (2 to 3 cups cooked) so I can make this a vegetarian main dish, and I use less cheese, so it's not quite so fattening. Seasoning is perfect as it stands.

I thought this dish was soOOoo good!!! i added some crushed red pepper and cayenne pepper since i like spicy and it was perfect! I also through in some spinach and mushrooms. MMmMmmmmm....

I give it 4 stars for thought. I added sweet peppers, feta cheese, avacado, extra salt(which I'm not a fan of) and hot sauce to garnish. It is rather bland but like all things not everyone is a like. Wish I would have read the reviews first. Would have added some diced hot peppers and more garlic. We like flavour!

Except for garlic (never enough garlic), I seasoned as suggested and found the flavor just right. I might reduce the amount of cheese next time I make it but definitely use sharp again. This could be good with sweet peppers and/or other varieties of squash added too.

This is a phenomenal recipe! I followed the posted advice and tripled the fresh garlic, herbs and spices (except for the garlic salt). I also added an extra cup of rice and used brown rice. I found I didn't need the full two cups of cheese -- it's a lot of work chopping up everything but well worth the effort!

I did as other reviewers suggested and doubled the spices. I also added crushed tomatoes instead of the chopped (personal preference). I topped it with a ton of cheese, and the kiddos really gobbled it up!
