Zucchini Delight

Need a new way to cook all that summer squash? This recipe combines zucchini, yellow squash, cabbage and onions, cooked in chicken broth. Easy and delicious! 

Zucchini, onions and carrots are baked in a creamy concoction of stuffing mix, cream of chicken soup, sour cream and butter. 

Quick, easy and very good. I always make it as an appetizer for barbecues at home. Melted Cheddar cheese provides a wonderful, simple topping for the sauteed zucchini slices. 

Enjoy these little biscuits stuffed with zucchini, cheese and herbs at your next party or picnic. This recipe is a great way to use some of the extra zucchini growing in the garden! 

There 's zucchini and egg and cheese and basil in this tasty, tasty dish, and one surprise ingredient - rolled oats. So when the casserole emerges from the oven it has a wonderful texture, and it 's healthy. Serves eight. 

Zucchini is sauteed with onion, tomatoes, bacon, and cheese. Great as a side or as a vegetarian main. 

A match made in heaven: scrambled eggs and zucchini. Note: this recipe is easily doubled, tripled, etc. Ratio of 1 to 2 zucchini per egg. Great served over rice. Variations: add one clove diced garlic to oil before adding zucchini. Or, add any of your favorite fresh herbs; they combine well with the eggs and zucchini. My favorite additions are oregano or rosemary. You could also add two teaspoons soy sauce to beaten eggs, or sprinkle over egg and zucchini when cooked.

This is very delicious! I like to use fresh vegetables from the market when I make this. It has a juice after it's cooked that is great for dipping bread into. 

A sauteed zucchini, corn, and tomato mixture is topped with sharp Cheddar and Monterey Jack cheeses!
