This is definitely a keeper! I cut back a bit on lemon juice and just about doubled the spices and added a bit of cornstarch to thicken it like other reviewers suggested. It turned out perfectly and was so yummy with vanilla ice cream. Now I'm sharing this recipe with some friends who also had an abundance of zucchini :)

My family liked this dish better than apple crisp! Have made the crisp with sugar and with splenda and definitly prefer the splenda. No one will know that it is zucchini! I have shared this recipe with several other cooks. A+++

It actually tastes like apples! I followed to recipe exactly and I thought it was just fine without any changes. I even served it to my inlaws - and they gave it great reviews too!

Loved this. Wondered why so much lemon juice and now I know! My DH says if he didn't already know that he was eating zucchini he would have thought it was green apples!

Deceivingly delicious! I added some raisins and shredded green apple, and we really enjoyed it. Please don't tell my family it's zucchini!

My family thought that this was apple crisp when they first tried it! When you refridgerate and reheat it, it gets sort of a pudding-y texture, I thought that it was better warm. Still very impressive!

I thought the sugar was just right, and it tasted good. However, by the next day a great deal of liquid had leached out. A thickening agent might be helpful.

It was just okay. The texture turned me off and the taste was different. I toke it to work and it didn't get eaten. I did let them know it was zucchini. So - perhaps they weren't advertureous to try it. Those that did try it, didn't rave about it. I won't be making this again.
