Great and yummy!! Yes, I did tweak it but I do all recipes that I try. I added an extra egg. I would agree draining the zucchini and I just didn't have the energy to do that. I thought the consistency was fine but can imagine it being better if the zucchini had less moisture. I also added a cup of corn which adds a nice crunch.

I devoured this. Somewhere between quiche and cornbread, this has the potential for many more creative applications. I added some cream to the eggs and beat them with a handmixer to emphasize the quiche-like side of this dish. Then I simply mixed that with half flour, half cornmeal and some baking powder. I plan to try all sorts of veggies, meats, and cheeses in this base.

This casserole was delicious. I used my homegrown zucchini which was not watery at all. I did, however, add a small can of diced "hot" green chile peppers and also grilled two ears of corn, sliced off the kernels and added this to my recipe. I also added about 1 c. of cheese to the mix and an addition 1 c. on top.

This was delicious. I tweaked the recipe before I started and added diced, cooked bacon and minced garlic to the mix. Instead of muffin mix, I made my own by using just the dry ingredients of a corn muffin recipe. I couldn't find ready made muffin mix in the store, and now I have extra ready for the next time. I agree that one hour is much too long, and the cheese should be only the last few minutes. As for wetness, I found it was just fine. It's a keeper!

This was so-so. The cheese on top ended up being hard when it was done baking. If I make it again I'll cover it during baking. I was hoping it'd be better though.

I thought this was very good. I also cooked in a 9 x 13 pan. I added two small cloves of garlic and some fresh basil and oregeno from my garden. I will make it again.

I'm hesitant to review the recipe since I made so many modifications to it, but I wanted to share how I cooked it in case others want to try it. I'm rating it 4 stars because I think it would be a little bland as written, but with my modifications it was delicious! I browned and crumbled a pound of sausage in a hot skillet, then removed it from the pan with a slotted spoon. In the same pan, I sauteed the onion, along with a chopped red pepper and the kernels from two ears of grilled corn on the cob. Other than that my only changes were to add 3/4 of the cheese to the mix and cook for 45 minutes, then sprinkle the remaining cheese on top and cook until melted - about 5 minutes longer. Oh, and I cooked it in a greased 9x13 dish instead of the 2-qt casserole. If I make it again (and I probably will!) I may add a can of chopped green chiles and serve it with salsa on the side. Very tasty, and a great way to use up zucchini!

I read the other reviews and made a few changes: added one lb. of browned sausage, diced red pepper, and for a crunchy topping, I added about 3/4 cup of Panko bread crumbs tossed with a little evoo. This turned out terrific. Family said this is definitely a keeper.

Needs a little crunch, perhaps bacon and the red pepper sounds great. We are also thinking of using green onions instead of the yellow onions and adding a topping to make it crunchy perhaps crushed butter crackers.

Even my son who hates zucchini loved it, I did add diced red pepper as others suggested and it added nice color and flavor to the dish. Will definitely be making again!

This was great and it used lots of zucchini. I wrung out my shredded zucchini in a tea towel just like I do with frozen spinach. I also added a diced up jalapeno. I had many requests for the recipe. Hint - I grated the zucchini in the food processor then did my onion and jalapeno in the processor too.

I did this exactly as it said but it came out with not quite enough flavor for us and a little dry. I did grate the zucchini the night before and stored it in the fridge so maybe they lost moisture and that is why...I would add some more spices next time. My guests loved it though so I may try again with freshly grated zucchini.

Looking for ways to use up zucchini from the garden, so tried this based on earlier reviews. Definitely squeeze the water from the zucchini, messy but worth the extra step, gave the casserole a nice firm texture. Used Jiffy corn bread mix, as that's what I had on hand, and added a couple of teaspoons of seasoned salt. Put 3/4 of the cheese in the mix and added the last 1/4 to the top only during the last 10 minutes. My husband and kids LOVED it, and it made a nice big amount to last two meals. I found it a bit sweet and will try it with a non-sugar corn bread mix next time, maybe even add some fresh dill.

This is now my husbands favorite zucchini recipe! I also salted and drained the zucchini in a colander before mixing it with the other ingredients. With zucchini season in full swing at our house, we will definitely be making this one again!
