My rating is for the recipe exactly as given. The first time I took the advice of another reviewer, lightly salted the zucchini and squeezed out the excess water (big mistake) but didn't change anything else. Well it was way too dry and lacked flavor. There’s not a lot of liquid in the recipe to begin with. I made this for the second time yesterday with these changes: 1. DID NOT squeeze out the water from the zucchini. 2. Added a half cup of sour cream. 3. Added a third egg. I took this with the above changes to a church potluck and was inundated with requests for the recipe. It was fabulous – moist and very savory. It seems the recipe author intended for it to be moist hence the last part of the name “casserole”.

Fabulous way to use extra zucchini, and that cornbread mix in your cupboard. Great flavor, too. Not too heavy. Excellent side dish! I've made this several times already and it's made it into my "fave allrecipes.com recipes" collection. =)

I thought this was great! I added all of the cheese to the mixture. I had extra cheese and sprinkled it on top. i baked it @ 375. Recipe was quick and easy.

This is so yummy & light. Like a fluffy stuffing. Because I didn't have cornbread mix on hand, I used my cornbread recipe without the liquid (Just added a large serving spoon of plain yogurt for moistness) I also dried out the zuchini before mixing. We will have this often. Thank you for a wonderful recipe.

I absolutely loved this. I personally had no problem with the 'gooeyness' that some are saying...I had no need to take the water out of the zuchinni...i followed the recipe exactly and it came out fine for me! :\ anyways, i'll definately make again! total awesomeness

This was delicious and a great way to use zucchini. I would have liked even more zucchini, and think it was a little gooey - might bake it longer next time. Kids liked it too.

Great dish for brunch. I made it the night before and heated it prior to eating. It tasted even better the next day! I have made the recipe as written and it was good but have also added garlic and italian seasoning for an extra touch of flavor!

This was great! I added a titch more salt to counteract the sweetness of the cornbread and used dried minced onion, which may have cut down on the sogginess some reviewers mentioned as the onions would rehydrate, taking up some of the moisture). It reminded me of hush puppies, yum! Thanks for the recipe!

I used half yellow squash and half zucchini just because it's what I had. It came out great. I really liked it, but my family is not a big fan of cornbread.

Yum! I did use about 1/4 cup of sour cream and I did add cayenne pepper b/c I like things spicy and it was wonderful! My family loved it!

I tried this recipe. I followed the instructions and used exact measurements of ingredients. Instead of shredding the zucchini, I chopped it because I did not have a hand grater. My bread was just right. It had a moist cornbread texture. I would make this dish again except I would put ground Italian sausage in it and cut back on the onions; they dominated the taste of the dish. Next time I will try another cornbread mix. Jiffy was too sweet. All in all, this dish is a good stuffing that have limitless options to suit your taste.
