INGREDIENTS
2 medium zucchini, cut into 1/2 inch slices
1/4 cup water
1 (15.5 ounce) can hominy, drained
1 (15.25 ounce) can whole kernel corn, drained
1 jalapeno pepper, seeded and chopped*
1/2 teaspoon salt
1 cup shredded Pepper Jack cheese

DIRECTIONS
In a 1-1/2-qt. microwave-safe dish, combine the zucchini and water. Cover and microwave on high for 2 minutes; drain. Stir in the hominy, corn, jalapeno and salt. Cover and microwave on high for 3-4 minutes. Sprinkle with cheese. Cook, uncovered, on high for 1-2 minutes until cheese is melted and vegetables are tender. Let stand for 2 minutes before serving.
FOOTNOTES
When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face.
This recipe was tested with an 850-watt microwave.

This was tasty! I did add some cumin and omitted the hominy (I didn't have any). It was simple to make and is definitely a good blend of flavors.

This was great. I changed it a little based on what I had at home. I used cheddar cheese and mixed it in the vegetables and added cayenne pepper instead of jalapenos. This was absolutely delicious. I will definitely make this again and again.
