INGREDIENTS
2 cups coarsely shredded zucchini
2 cups shredded cabbage
1 medium carrot, shredded
2 green onions, sliced
1/2 cup thinly sliced radishes
1/3 cup light mayonnaise
1/3 cup mild picante sauce
1/2 teaspoon ground cumin

DIRECTIONS
Drain zucchini by pressing between layers of paper towels. Place in a large bowl and combine with cabbage, carrot, onions and radishes. In a small bowl, combine remaining ingredients. Pour over vegetables and toss well. Cover and chill at least 1 hour.

My family does not like coleslaw. However we were asked to bring this recipe to a "zucchini" party. Everyone had to make a zucchini recipe and the host wanted this salad. My husband who doesn't even like zucchini loved this recipe! I don't like coleslaw and I loved this recipe! I will definately make it again even if I'm not going to a zucchini party! I used a julienne slicer for the zucchini and the carrots so that they were the same size. I bought store bought cabbage. The mayo and picante sauce was an unusual but delightful surprise. Everyone at the party thought this recipe was a keeper!

I had an abundance of zucchini and cabbage, so this was the perfect recipe today. I brought a double serving to a BBQ. I was a bit hesitant about the picante sauce, but it turned out to be a nice combination of flavors. It needed a little bit of salt, but otherwise the recipe is good as-is. It is not an overly creamy sauce...a little lighter. Thanks!
