Wow, that's a lot of sugar! I know that zucchini is not naturally sweet, but it's not THAT bad!
First, drain the zucchini: peel and chop into 1"-2" pieces. Put the zucchini pieces in a colander in the sink and sprinkle salt onto it. Let it sit for 20 minutes to 2 hours, then rinse off the salt. When you do this, you are reducing the moisture content of the squash and pulling any bitterness out of it at the same time.
I added a whole cup of sugar to the zucchini mixture. I only added 1.5 cups of sugar to the crust, but it's still massively too sweet. I actually find it too sweet to enjoy much at any one time.
It really does taste very similar to apple cobbler. Even my highly skeptical husband was impressed.
