YUMMY YUMMY YUMMY. great recipe. i did use wheat flour and splenda instead of white flour and real sugar. no one noticed a difference. i also added some flax seed and the consisitency was awesome!

Like so many other reviewers, I used 1/2 oil and 1/2 applesauce. I also used 1/2 white flour and did a combination of whole wheat and oat flour for the other half. I added raisins and chocolate chips along with the walnuts. The one thing I tried and DO NOT recommend is using 1/2 the amount of sugar...it needed to be a little more sweet. Next time I will add more cinnamon, nutmeg and perhaps some cloves.

Very good recipe! I was out of sugar (gasp!) so I used 1/2 brown sugar and it made the loaves very moist! Also, I substituted coconut oil for 1/2 the oil. I wanted to do a topping like others had recommended, but was running short on time and ingredients. So, I sprinkled brown sugar and cinnamon over the top of the unbaked loaves then baked them. When they came out I put a couple small pats of softened butter on top and let it sit until the butter melted and soaked into the loaves... SO YUMMY!

This is my mother-in-law's recipe and the BEST!! So moist and yummy. We have zucchini coming out of our ears and I'm doing my best to keep up freezing loaves to last us beyond summer. The problem is they keep eating it!!!

I didn't do the crumb crust, as I just threw it all in a bundt pan and baked. I also did not add nuts, but instead mini chocolate chips so the kiddos love it. I did add a 1/2 tsp. nutmeg and used half oil, 1/2 applesauce as others. Otherwise I left the same and it turned out very well. It took about 60 minutes in the bundt pan. Yummy.

Great recipe. I used canola oil and the crumb crust as mentioned earlier. The crumb crust melts into the bread after a while and just adds that extra sweetness. Great!

I made some changes to this recipe as well and am very pleased with the results! 1 Cup Oil changed to 1/2 C oil and 1/2 C Unsweeted Applesauce 2 Cup white sugar changed to 1 C white and 1 C light brown sugar 2 Cup Zucchini changed to 2 C yellow squash Added 1/4 tsp. nutmeg and omitted the nuts. I also used the topping that was recommended however only used half the amount and saved the rest for the next batch. My breads did not rise like they should however my husband said it was NOT BAD so that means this recipe is a keeper. Thanks for sharing your recipes and tips!

The only things I did different from the recipe are 1. Made into muffins (bake about 25 min), 2. omit nuts the family is LOVING them. I'm going to try them next time with some of the suggestions listed and I'll post my thoughts then! Great recipe!!

We absolutely loved this recipe!!! I did alter it a bit as suggested by others. I added the crumb topping. I used half oil and half applesauce, an extra cup of zucchini and the nutmeg. I added my own little health twist by adding some ground flax seed. Doesn't get any better than this!

Thank you for posting this recipe, I really found it easy and soooo tasty! It came out perfectly! It was moist and even my 2 1/2 yr old daughter liked it, which is rare these days considering that she doesn't like anything except pasta and chicken nuggets!! I will be using this again and passing it on to my family!

I subbed 1/2 c unsweetened applesauce for half of the oil, used half white and half brown sugar, and added a crumb topping as suggested by a previous reviewer. It was amazing. Also, I even messed up the first batch because I had been using a 3/4 c measuring cup thinking it was the 1 c when I measured out the flour...but though it required a slightly longer baking time (and came out a bit wetter and eggier), it was still fantastic.

This is the first time I have ever made zucchini bread but it won't be the last time. I made this recipe exactly as instructed and my family thought it was wonderful. Very easy to assemble with ingredients that are standard in most kitchens.
