This recipe was a HUGE hit at our house! I was reluctant at first to make this, seeing as how Zucchini was a main ingredient. Luckily I had a few extra zucchini's kicking around from the garden this year, so I decided it was high time to try something different. So glad that I did! I did make a few modifications though, as I believe a few others also suggested. First I halved the oil and substituted apple sauce. I also added 4 cups of grated zucchini, and not the listed 2 - this makes for an unbelievably moist bread. Plus it becomes translucent, which is a huge plus for those with kids - my daughter loved this bread and always asked for seconds. ;) I also added 1/2 a teaspoon of nutmeg, just a personal preference. Last but not least, I halved the walnuts and used a 1/4 cup of walnuts in one of the breads, and then used a 1/4 cup of chocolate chips in another. I figured the added sugar wasn't a big deal since I had already reduced the oil by half. I will definitely be making these again, and again. Yummm....

perfect base recipe. I have used this same base for years and it's always gone befor it cools. I also use 1/2 applesauce and 1/2 oil. It is great!!!

I thought this bread was very moist and yummy. I have made it twice now...both times I used half oil and half apple sauce. The second time I made it I added some carrots. I didn't have enough zucchini and figured that I would give it a try. I was pleased. Thanks for sharing.

This is the best zucchini bread! I had a huge zucchini so I made your recipe & everyone loved it. I used pumpkin pie spice because i ran out of cinn. I ran out of cinn. because I ended up making 6 loaves! Everyone wanted one! Thanks for the recipe.

This recipe is a keeper! I did make some changes though.I only added 1 1/2 cups od sugar, and did not add nuts or raisins, otherwise i followed the recipe. My husband and i loved how moist the bread was. i left one loaf out and froze the other for another time.

This recipe was dynamite and so easy! I made it as written, substituting the 1/2 cup applesauce as other suggested, I did add the crumb topping as suggested and it came out perfect. Made one loaf with nuts and the other without. Rave reviews from family and co-workers. And it was the first time I had ever made zucchini bread - no need to look any further. Thanks so much!

Whew! Made lots of changes...summer squash instead of zucchini, 1/2 whole wheat flour 1/2 AP flour, 3 TB ground flax seed, heaping 1/2 tsp each ginger, nutmeg, and cloves (I wanted more of a spice bread) and omitted nuts. Oh and a cream cheese glaze. Very good!!

This bread is awesome! I have made it twice, and each time I made it with the topping that one reviewer suggested. I do add a touch more flour just because, when people say that it is super moist usually translates to doughy, I have not had that problem with this bread. Thanks for such a great recipe.

I'm sure the original recipe is delicious but I liked adding the suggestions of other reviewers. With the following suggestions, it made it from home made bread to something I would expect to get at a nice bakery: I added the 1/2 teaspoon of nutmeg and an extra cup of zucchini and replaced half the apple sauce with oil. I also added the "crunchy crust" recipe. I also used King Aurther white whole wheat flour. IT WAS AMAZING! The men in my house had no idea that it wasn't as bad for them as they thought :o)

This came out delicious, but I made a few adjustments. First of all, it does not need a whole cup of oil, I only used 1/2 a cup. Instead of 2 cups of white sugar, I used 1 cup white and 1 cup brown. I increased the cinnamon to 2 tablespoons, but thats only because I love cinnamon. It came out nice and moist, and it was probably healthier without all that oil. Thanks for the great recipe!(:

Good recipe. It was a bit dry but good. Both loaves were gone within a day. I did limit the amount of cinnamon and added in some nutmeg
