thinly sliced unpeeled zucchini
Original Bisquick® mix
finely chopped onion
grated Parmesan cheese
chopped fresh parsley
dried marjoram or oregano leaves
garlic, finely chopped
eggs, slightly beaten
I had a surplus of zucchini and thought this might be a good way to use it. Overall I really liked it and will definitely make it again. A few tips though:
1. Add the zucchini last. I had a hard time mixing everything thoroughly enough when I added everything in the order that the recipe recommends.
2. I found that 25 minutes wasn't quite enough, 35 was just perfect.
Overall I it a 4 as written, with my suggestions above it is a 5.
I have been looking for this recipe for some time. Reminds me of my childhood because my mother made this all the time and it was wonderful. Made it yesterday and it was even better than I remember. Thank you for the recipe.
After reading these reviews, I increased the bisquick, doubled the garlic, grated the zucchini, added cheddar cheese (per a similar recipe). I accidentally omitted the oil but didn't miss it (oops!) & baked in a mini-muffin tin about 17 minutes. Made an easy & decent appetizer :) that was more biscuit-like, less egg-y than others mention. I definitely liked it and would re-make, but I don't know that it would get raves, even if followed exactly??
By the look of this picture, you would think the end result would be firm and easy to serve. No so. Mine turned out more like the texture of quiche. I thought it might need more cooking time but that really didn't help. I think one less egg and a bit more bisquick might help. I served it to my guests and they were kind but not many seconds were taken. They thought add bacon and serve it for breakfast. Not what I wanted to hear. I am giving it a 3 star.
This recipe needs some work but was good to taste. First, it needs to cook longer. It was mushy when it came out so I think maybe more bisquick and less oil. The flavors were great and we ate it. It could just be a little better.
