You can use yellow, white, or red miso paste for the soup, depending on your preference. You will also need dashi, which is made of dried kelp (seaweed) and dried bonito (fish), and can be purchased in granules or powder form in conveniently-sized jars.

I learned this style of cooking from my mother in law. This recipe will work with crawfish or shrimp. You can add as many lobster as you want, but cook no more that 2 at a time. 

Tempura Dipping Sauce

The traditional Japanese dipping sauce for shrimp or vegetable tempura. This is the full-flavored version - unlike the thinner, watery, less robust sauce being served in some restaurants. Serve in small bowls at each setting. Optionally, provide grated fresh ginger and grated daikon to mix into sauce. 

Chile for Tamales

This is a wonderful marinade for pork tamales. Just blend the chilies with some water and oregano, and mix with pork before assembling tamales.

Tender lentils simmered with onion, garlic, carrot and bay leaf make a cozy bed for delicious Italian sausage, flavored with nutmeg, cloves and peppers. A visit to a specialty grocer to find the sausage adds the spice of adventure to this meal.

To make a quick and easy meal, cook farfalle pasta in water flavored with chicken bouillon, then toss the hot pasta with a bit of butter and some sweet green peas. Add a few red pepper flakes if you wish, and garnish with parsley to serve.

A great soup to simmer all afternoon, full of tomatoes, onions, celery, ham, and spices. This recipe makes eight to ten servings so make sure you have a large stock pot on hand.
