I have been making this egg casserole for 13 years, primarily for Christmas brunch gatherings. It includes eggs, bread, cheese and sausage. It also works great with bacon.

Assemble the ingredients the night before, and bake this casserole in the morning. Stand back and wait for the compliments. I've made it with fat free cottage cheese, egg substitute, and reduced fat sausage; the taste is still wonderful!

Hard-cooked eggs and yummy cheesy sauce, spooned over toast points! This is my family's favorite holiday brunch. We call this dish 'Claudia's Eggs'. Try to use extra sharp Cheddar cheese for the flavor.

There's nothing more American than ham, eggs and Wonder Bread. Plus, with the calcium of eight ounces of milk in just two slices of Wonder Classic White Bread, this casserole is not only good, it's good for you, too.

I sometimes take this to work in the mornings and everyone who has ever tried it has asked for the recipe. Try it with your favorite salsa on top. You may add cooked sausage and/or sauteed green onions if you prefer.

Every Christmas, someone is responsible for making these delicious tarts. A great finger food breakfast that can be eaten while enjoying the gifts that Santa has brought. Easily reheated in the microwave to enjoy throughout the day.
