6 medium ears sweet corn
1/2 cup butter or margarine, melted
2 teaspoons Dijon mustard
1 tablespoon minced fresh parsley
2 teaspoons prepared horseradish
1/2 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS
Place ears of corn on a double thickness of heavy-duty foil. In a small bowl, combine the remaining ingredients; brush over corn. Fold foil around corn and seal tightly.
Grill, covered, over medium heat for 25-30 minutes or until corn is tender, turning once.

I have made corn on the cob time and again, and often enjoy trying different flavoured butters. This one really worked for me! The lower heat notes of the mustard, along with the sharp zing on the horseradish combined well with the natural sweetness of the corn! I originally made 6 cobs for two people, expecting leftovers to use in corn chowder. Needless to say, there was no chowder the next day, as we ate all of the corn!
