My Grandparents used to make this for us when we were children. The addition of escarole adds a great flavor to the bacon, potatoes and eggs.

My mother-in-law wrote her recipe down for me 25 years ago. It is still one of my favorites. The parsley is optional in this recipe.

Parsley, shredded carrot, pimentos and white onion all play their part in making the dressing and the salad taste sensational.

Mediterranean Potato Salad

This salad begins with red potatoes, which is a very good sign, and ends being tossed in a really nice dressing spiked with lemon juice. A pleasant taste change from the same old, same old potato salad.

This potato, bacon and onion salad actually tastes better the second day when it's reheated.

Red potatoes are moist and hold up very well when cooked and tossed with delicious stuff. And this recipe is great, offering just the right proportions of potato and dressing. Serves twelve.

This hearty salad is typical from the Liege region in Belgium. It can be made with canned beans and pre-cooked bacon strips but the fresh version is way healthier and tastier. Can be served cold as well.

What makes this traditional potato salad so good is that the dressing is poured onto the potatoes while they are still warm. Then the whole wonderful concoction sits for an hour to blend all the flavors perfectly. Makes six generous servings.
