Whenever I pack a picnic, this salad comes along. It's great with grilled entrees or sandwiches. In summer and fall, it's among my most requested side dishes. It keeps well in the refrigerator, so you can make it ahead of time.

'While the meat is browning, I chop the vegetables for both the sandwich and the Easy Veggie Salad,' she says. 'If I'm especially short on time, I'll buy sliced vegetables from the salad bar at the grocery store. 'The light, flavorful dressing whisks together in a snap and tastes better than bottled dressing. Since this recipe makes a lot, we can enjoy the salad the next day, too.

THIS SALAD is not only delicious, it helped our family weather the Depression. I still remember lining up with Papa to receive dried beans and a 10-pound sack of yellow cornmeal. We used the cornmeal to make polenta. Mother made this salad with vegetables from the garden, and it really tasted good with the polenta. -Rudy Mancini, Calistoga, California
