Great dish! Very tasty, not too spicy, and very satisfying. My family likes to put sour cream on the side to eat it with. But this is a great dish for the whole family. (Unless you've got some really picky eaters when it comes to vegetables.)

I have made this twice in the past week. Great for entertaining - you can even make it ahead of time and just reheat. I used red bell peppers because I don't like green ones, added some black beans and thawed frozen corn. My husband isn't a fan of vegetarian entrees, but even he admitted that this one doesn't need meat. I do find myself having to add extra water after the rice is in, so I would suggest keeping an eye on it. Delicious, and perfectly spiced.

Try this to make it a little easier and tastier. My rice was left over rice.I browned about a pound of bulk fresh ground market sausage with spices,then added some red & green bell pepper & onion frozen blend. After the onions & peppers are done,I then add tomatoes,drained beans and then add rice.A quick skillet all in one meal.

Very yummy meal. This is economical as well as hearty and delicious! We used orange bell peppers because they are less acidic and brown rice for more fiber!

My toddler loved this, I thought it was only OK. Would make again since my son loved it so much. I think I overcooked the rice, it was pretty mushy, so make sure not to do that!!

This is always a hit. I make this all the time. The one change I make is to substitute red bell pepper for green. If I'm feeling lazy or rushed I skip the baking and just serve it from the stove top and it is still great. I have been asked for this recipe from neighbors, family,friends, basically anyone who has tried it wants the recipe. Serve this topped with sour cream and a green salad and it is the perfect dinner. Leftovers are wonderful the next day as a burrito filling.

I'm not sure I can rate this recipe because of the changes I made...but I still think it's a good recipe. First, I used black beans instead of kidney beans...because my husband doesn't like kidney beans. I skipped the mushrooms, because I don't like them. I also used a frozen onion/pepper mix (because I like to work with frozen vegetables better). I used about 1/2 the amount of diced tomatoes (1 16 oz can)...and found that to be more than enough. I also skipped the baking...because it didn't seem necessary. Overall, very base good recipe that's adaptable to fit just about any taste.

I thought this was a great dish! It was a hit at the dinner table. I added a little more of each seasoning & I did add some salt as well. I also substituted pepper jack cheese. I will definetly be making this again & again!

This was great. The only real change I made to it was using frozen corn in place of the green peppers. I thought the corn went well with the beans and tomatoes. The flavor of the dish was excellent and it was very hearty. I did sprinkle a little bit of shredded cheddar on top with the mozzarella for color. I could also see throwing leftover cubed chicken or cooked ground beef in with this as well.

Very good. I used Lundford Wild/Brown Rice and shredded pepper jack cheese. For me, this was a great mix of rice and beans with the right amount of spicy without too much HOT.

This is a pretty filling comfortable meal. I added spicy sausage and jalepenos and nixed the mushrooms and cheese. Best of all, it's a one pot meal, my favorite.

Not bad.. I prepared a big fat chicken for the grill and had some time to make another side dish. Used yellow pepper and added a pat of butter as the veggies were sauteing. Scaled this to 4 servings and had to add more liquid at the end. Family liked this better than I did...think I will add some of that grilled chicken and a little cheddar to the leftovers and make burritos for lunch :) Thanks Daphne.

We really enjoyed this dish. We didn't have kidney beans so we used chick peas (garbanzo beans) instead, and it was great. We also omitted the mushrooms and one of the green peppers. Otherwise, we didn't make any changes. My husband salted his, but I thought it was just right.

Overall very good, but the cooking time wasn't long enough to cook the rice completely - I used brown rice instead of white, so this may have been part of the problem. Also, the recipe needs a fair amount of salt added. I don't like mushrooms, so I left those out and added one zucchini and one yellow squash instead.

Quick, easy, tasty. Mozzarella cheese is a nice change from the standard Cheddar. I sprinkled some chopped cilantro on it before serving to freshen it up. This will be a reliable dish for busy days and lean-money months.
