Everyone that has tried this soup has really enjoyed it. I have made a few variations with each batch. All come out tasty. I sometimes add a pound of ground breakfast sausage (cooked) at the end.

Really delicious, everyone loved it. I used 2 cups of water and 1 cup of chicken broth. Didnt add any bouillon or additional salt. Used Extra Sharp Cheddar instead. Will use extra potatos next time....YUMMY

I thought this was really good! Even my picky 14-month-old son loved it! I did change it up just a little bit. I used about 4 cups of water which was just enough to cover my potatoes in the pot. I also added 8 oz. of cheese because it really needed it (maybe because of the extra water I added).I also didn't add the green chilies which probably would have made it a little more zesty. Still, a VERY yummy soup and I would make this again. Very easy and very good!!

Super good! I added about 3 cups of water on my second try after scorching the potatoes on the first try. Also, I added about 1/2 onion in with the boiling potatoes instead of diced minced onion. It was excellent!
