I first saw this recipe in an old Southern Living, then I lost my copy of the magazine. So glad to have it here on the web. Normally I make the typical Southern mustard type potato salad, but this is a wonderful change. We especially enjoy it with fresh shrimp (in Savannah we get lots) and other summer grilled meats.

Yummy - I love horsey sauce in potato salad!! I used bacon bits and three hard boiled eggs. The horsey sauce is very light I think I will add more next time!

Instead of boiling the potatoes, I roasted them with a little EVOO/salt/pepper in an 400* oven for about 35 minutes. I added chopped pickles and shredded sharp cheddar because our family favors that in potato salad. I also used FF sour cream and low-fat mayonnnaise. Quite tasty. I am a firm believer now that roasting your potatoes makes the best out of your potato salad ingredients. Great salad. Doubling the recipe left us one small bowl for tomorrow's lunch. NOTE: If you have small kids like I do, you might want to cut back on the amount of horseradish only because it can be a little much for little mouths. Next time, I might add some dry ranch seasoning and chopped celery.

This recipe has so much going for it that with just a little kicking up it is easily worthy of five stars. Oddly enough, it's the basics that are missing - a little seasoning and the color and texture a few raw vegetables would provide. I knew this was going to be awesome good when I couldn't stop sampling it as I was mixing it up. And I knew Hubs thought it was a winner when he dug in for seconds, something he rarely does and certainly never for potato salad. I love the horseradish flavor which was pleasantly subtle. I love the addition of sour cream as well as the mayonnaise, and the equal measures of both. And the bacon, hard-boiled eggs and green onions put this right over the top (especially the bacon). But it lacked seasoning, color and crunch, easily remedied with Jane's Krazy Mixed Up Salt, lemon-pepper seasoning, chopped celery (GOT to have chopped celery!) and chopped mixed color bell peppers. Hubs and I both agree this potato salad was nothing short of perfect, one of the best we've ever had.

Delicious change from the traditional dilly potato salad. I only added 1 tbsp horseradish and a dash of Melinda's hot mustard, and threw in some finely diced celery and yellow sweet pepper for colour and crunch: it was perfect. I will definitely make this one again and again.

Wouldn't change a thing to this recipe, it was one of the best potato salads I've ever eaten. Also my first time making a potato salad did it for company and all enjoyed it. Keeper!!

This was just okay for us. It was quite bland - after seeing it sit in the fridge for two days I added some celery and more chopped onion and there were some more takers - but overall it was not a hit.

Holy Cannoli this is a great alternative to the same old same old potato salad. It was perfect for both horseradish lovers and haters at our last family dinner. Enough zip for those who like horseradish, and mild enougth for those who don't.
