Zesty Cheese Soup

INGREDIENTS

  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (14.5 ounce) can chicken broth
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (10 ounce) can premium chunk white chicken, drained
  • 1 (4.5 ounce) can chopped green chilies
  • 1 pound process American cheese, cubed
  • crushed tortilla chips

DIRECTIONS

  1. In a 3-qt. saucepan, combine the first seven ingredients. Cook and stir until cheese is melted. Garnish with tortilla chips if desired.

This soup is great...I made it for your youth group Christmas party and everyone loved it. One of the mom's even asked for the recipe. I made it in the crock pot. I started it early in the morning on high. I added the cheese around 4 and turned it down to low. By 6 it was done. I will make this over and over again.

I have been making this soup for years. It can be made on the stovetop or in a crockpot. I have people over all the time and this is ALWAYS a favorite with kids and adults alike. I keep the recipe available to make copies b/c I have a request for it every time. Best with mexican flavored toms/chilis, and black beans in addition to the pintos. No one has a clue how easy it is, and they love it!

IT JUST WAS NOT ANYTHING SPECTACULAR ALL I DID WAS OPEN A BUNCH OF CANS AND HEAT IT THERE WAS NOTHING GREAT ABOUT IT
