My husband is a big fan of horseradish(I'm not), so I thought I'd give this a try. My roast was bit bigger so I didn't measure, I just slathered the top with the horseradish--probably used at least a half a cup. Much to my surprise it just adds to the depth of flavor. There's a tang to the gravy but it doesn't scream "horseradish". I thickened the gravy with cornstarch as I usually do. I think the horseradish/onion gravy would also be really good with meatballs.
