Yummiest Green Beans Ever

"This dish was created out of boredom with plain, average green beans! It's sweet, tangy and savory...and my kids absolutely love it! Hope you enjoy it as much as we do! I use leftover sliced deli ham since it is already sliced thin and makes perfect tiny pieces, but leftover dinner ham would be delicious also!"

INGREDIENTS

  • 1 tablespoon extra virgin olive oil
  • 1/4 cup finely chopped onion
  • 1/2 cup chopped cooked ham
  • 2 1/2 tablespoons red wine vinegar
  • 1 (16 ounce) package frozen cut green beans, thawed and drained
  • 1 tablespoon honey mustard
  • kosher salt to taste

DIRECTIONS

  1. Heat the oil in a large skillet over medium heat. Add the onion and ham; cook and stir until brown bits start to show up on the bottom of your pan, 5 to 10 minutes.
  2. Mix the red wine vinegar into the pan, scraping up the browned bits from the bottom. The vinegar will evaporate quickly - don't panic. Mix in the mustard, and reduce the heat to medium-low. Add the green beans and stir to coat. Cook just until tender but still crisp, about 5 minutes. Season with kosher salt and serve.

This was very good and very easy. It adds a nice tang to plain green beans, but might clash with a flavorful main dish. Stir the beans before serving as the sauce does not cling to the beans. And use fresh beans whenever possible! Be forewarned, they smell like dirty socks when you're cooking them.

Instead of honey mustard, we used a grainy Dijon mustart...It seems to add to the texture

I think the name says it all. These were very yummy! I'm not much of a honey mustard fan but this was really good.
