Overall, this was pretty good, even my anti-casserole dad ate it and liked it fairly well. I cooked my squash and onions in a small amount of water in the microwave - just sliced, put in the baking dish I baked the casserole in and added a tiny bit of water for steaming and covered with plastic wrap. I microwaved for about 8 minutes total, and that really made this dish easy. I used fresh breadcrumbs instead of crackers and cut back on the cheese a little. I wanted more of a baked squash than a cheesy casserole. I would have liked less of the egg mixture, but overall pretty good. I'll probably make this again but modify it a bit.
