I would not consider this a casserole but a gratin, as it turned out a lot drier than a casserole. I think if I had eaten the first mouthful blind folded I would have guessed that this was macaroni and cheese instead of squash casserole. To be fair I did take a couple shortcuts which could have contributed to a drier texture; instead of boiling squash in water I used less water and sort of steamed it, so it was still somewhat firm but cooked through as I was afraid it would be too soggy. I only had one egg so to compensate I added a little extra milk. Also, I added some extra cheese. Even so, this was a pretty dry casserole.
I really liked this but I think I was expecting something with more white sauce like my mother used to make. However, my husband, who usually hates squash, liked this dish because it is less heavy than a regular casserole and said he'd eat it again. So, I am only giving 4 stars because the name is a bit misleading, though I think the tatse for what it is a 5-star dish!
