I had high hopes for this because I love squash. And butter. And cheddar. For a whole lot of bad for you stuff though, this didn't taste all that special. It was kind of bland actually.

I added roasted red pepper flakes, cayenne pepper, a touch of cumin, halfed the butter and cheese, and added zucchini and it was an amazing casserole!

This is a tasty casserole...it just needs a little tweaking. I cooked the squash on the stove just until it turned bright yellow, not until it was tender, and then proceeded with the recipe. I didn't have any round buttery crackers, so I used some leftover bagel chip crumbs I had lying around. I also added only 2 tbs. of butter to the filling, and completely omitted it in the topping. The casserole was very moist, and still greasy even with less butter. With these changes, the squash came out tender, but not mushy, and the the topping was crisp as well. Thanks for sharing, this is yummy!

We really enjoyed this dish! I followed the suggestion of a recent reviewer and cooked the onion and squash mixture with a little bacon (I used low fat turkey bacon). I'm not usually a big fan of yellow squash but enjoyed this dish very much. Even the kids liked it. I'll make it again. Thanks for sharing!

My husband and I love this recipe. We tried it last year and he could not wait for his garden to grow this year so he could have some more casserole! I double the amount of squash in the recipe and bake it for about 5 more minutes, a good use of our squash!

I had some yellow squash on hand, and not a whole lot else. I ended up adding club house crackers and a few whole wheat crackers, and used minced garlic and dried onion, baby carrots, nutmeg, Frank's Red Hot sauce, and Bacos bits. This was a spur of the moment "I feel like cooking" recipe and it turned out well. It was a bit mushy, but I'm one of those people who dislikes really crunchy food, so it was perfect for me. I like how quick and versatile this recipe is, being a college student I don't have time to cook forever or go grocery shopping often, so I like that I could use whatever I have laying around to make a good meal.

Great! Even better if you coat the sliced squash with Kosher Salt and let it sit in a strainer for a while. Then, rinse off squash and use in recipe. This keeps the squash from getting soggy.

Just as I was collection my ingredients for this, I realized I did not have "round buttery crackers". So, I used mini Ritz cheese filled crackers. Turned out just great. The suggestion to put the crumb topping on halfway through the baking time was right on also. Thanks Rosecart for a good way to use those summer crook neck squash.

I followed this recipe *almost* exactly - the only change I made was to remove the butter, both from inside the dish as well as on top. In my opinin, the butter was unnecessary because the eggs, milk and crackers gave this dish all the richness it needed. The end result was quite tasty (although my husband thought it was less so than I did). The only reason it didn't get 5 stars from me is that the crackers which I added to the squash turned out very mushy so the consistency was a little....off. If the texture of your food is an issue - you may want to avoid this, but the flavor was certainly good!

It's a very versatile recipe. You can add your own flare. It was so good, I passed the recipe on to my neighbor and she added green chiles for an extra kick. I made it a second time with a little italian herb seasoning and it tasted like a whole other dish.

This was yummy. I added minced garlic,onion powder, crushed red pepper and cayenne pepper. I think next time I will experiment and try adding tomatoes,zucchini, shredded carrots. Maybe even pimentos or bacon. Who knows !the possibilities are endless. Thankyou Rosecart

First time making squash. Cut recipe in half. Omitted butter in middle, used extra crackers. Next time would recommend cheese then crackers on top (layer rather than mixing).

Awesome recipe, though it does lack pizazz. I added fresh garlic to the butter while it melted (1 giant clove, crushed and minced), a little nutmeg to the top, and some fresh parmesan too... so creamy and decadent with fresh garden squash!

I have made this twice this summer with yellow squash from the garden. It is very good. I like using the crackers because some casseroles use too much bread or stuffing mix. I like all the cheese and that makes this easier to get the family to eat it too.
