Excellent! This was so easy to make and was perfect on a cold night. I used it as a side dish and scaled it down to 4 servings. Everyone loved it, even my picky Father!! As a side note, I used the "Easy Garlic Chicken" recipe by K Grecco as the main dish and they went together nicely. I will make this over and over again! A+++

My husband says he doesn't like squash and he really liked this (I loved it!). I scaled it in 1/2, sort of, using almost the full amount of cheese and made it in an 8x8 pan. I used 2 large yellow squash and 2 zucchini and steamed them just slightly. I sauteed the onion in the butter (we don't like raw onion) then combined those in a bowl and seasoned with salt, pepper and a little cajun seasoning. I followed the rest of the recipe but skipped the added butter on top and added more seasonings to the crackers. DELISH!

This is fabulous. Very tasty. I was concerned before I put it in the oven because it seemed soupy, but it firmed right up and looked beautiful when it came out.

Pretty tasty! I didn't have the onion and cooked it in a pan a little larger than the one recommended, so it came out thin, but it was fine when stacked together on a plate.

This is my fav squash cass recipe. You can really make two almost completely different dishes out of it. If you make it exactly as written you have a casserole but if you quarter the squash instead of slice and then boil it down for a while you have more of a souffle type dish. Very yummy either way!

I loved it! I modified it just a bit so it would be more Weight Watcher friendly. I used Reduced Fat Ritz Crackers, Weight Watchers Mexican Shredded Cheese, 1 egg and 1 egg white, 1% milk, light butter. It was excellent, my 5 year old and 11 month old ate. PLUS it's only 2 points!

I loved this recipe. It isn't filled with lots of extra spices, which is nice. The flavor of the Squash can come out with simple ingredients! Yummmy

I doubled the amount of squash and added two slices of cooked and crumbles bacon. I added all the cheese and the crackers to the squash mixture. I omitted the butter simply because I forgot to add it. It was like a souffle and was the best squash recipe I have ever tasted. Everyone that I have made this dish for has raved about it and asked for the recipe.

This was just okay. My changes: I doubled the onion, added some minced garlic, subbed zucchini for the yellow squash, and didn't pre-saute any of the items. I also omitted the two additional table spoons of butter, because 1/4 cup is enough to be pouring all over innocent vegetables. Nothing terrible, nothing great...just okay. At least I used up some of my zucchini!

I was very disappointed by this recipe. I'm only giving it 3 stars because it looked so pretty coming out of the oven! I was expecting something cheesey and crunchy and buttery, instead I got layers of squash surrounded by an eggy, crackery mixture. The two components didn't seem to blend very well. Don't get me wrong, it was quite edible, just not what I was looking for. I won't make it again. (Very pretty though!)

Mmmm I loved this! (Everyone else did too..) I added 2 crushed cloves of garlic and a sprinkle of nutmeg to the squash/onion saute...gave it some nice flavor. I'm not a casserole person but it's so hard to resist squash recipes this time of year. Glad I caved~ thanks for the recipe =)

Beware. . . this dish is extremely addictive. What makes this so amazing is that it tastes JUST LIKE macaroni and cheese. . . but so much healthier. To turn it from a size dish into the main event, simply add chicken pieces before popping it in the oven. . . so delicious. We also use zucchini instead of, or in addition to, the yellow squash. My boyfriend and I eat the whole 9X11 pan with alarming speed.

My husband says this replaces a family favorie casserole his mom always makes at Thanksgiving. I used onion crackers because it what I had on hand - added a nice flavor.

I absolutely love squash and this recipe is AWESOME! I especially love any recipe that taste good and can be made healthy. Most squash casseroles call for too much butter and cheese...can't keep my weight in-check with those. I followed directions and will make over and over and over again! Thanks so much!!

Excellent but I changed a bunch of things. I was afraid it was going to be too mushy and bland with just boiling the squash in the water so I pan fried it with fresh onions, garlic and basil. I used soy milk instead of regular milk. I also added some left over chicken sausage from the night before that had feta and spinach in it. It made a full meal for my family and they were all thumbs up! Thanks, I think it was one of the most satisfying caseroles I've ever made!! Thanks -Daphne

after reading other reviews, i decided to add some garlic and oregano to add flavor. I also used half zucchini for added color...Love,love, love this dish..Served this to company and got praise all over the place...Will definately make again.

I'm giving it 5 stars because it is a very good base recipe to which I added 1/2 of a chopped bell pepper(sauteed with the onions), 1 minced garlic clove, 1/4 tsp. red pepper flakes and a sprinkle of basil, thyme & parsley. Yellow squash is bland & can use any help you give it. We really enjoyed it & will cook it again.
