Wild Rice with Rosemary and Cashew Stuffing

"Essentially, this is a rice pilaf that I have modified ever-so-slightly to be used as a stuffing for a small roasting chicken. The type of nuts, mushroom, and herbs can be varied in any number of ways."

1 teaspoon olive oil
1/2 cup onion, chopped
1/2 cup chopped fresh mushrooms
1 cup chopped cashews
1 tablespoon chopped fresh rosemary
1 3/4 cups chicken stock
1 cup long grain and wild rice mix

DIRECTIONS
Heat oil in a skillet over medium heat. Saute onions until tender and translucent. Stir in mushrooms, and saute until soft. Add rosemary, and cook for 1 minute. Stir in cashews, and cook for 1 minute. Transfer to a medium saucepan.
Pour in chicken stock, and stir in rice. Cover, and bring to a boil. Reduce heat, and simmer until water is absorbed. Remove from heat, and let stand for 5 minutes. Stuff into the cavity of a small roasting chicken.

This recipe is delicious and makes the house smell great! It is a great way to get your kids who love rice to get some protien with it.

A gourmet rice recipe that you will be making often. Very tasty and different. I also used it as a side with dijon tarragon chicken and completed the meal with a simple french salad. Loved it!

What a delicious rice recipe. I made this as a rice side dish and received raved comments. This is too good to stuff into a bird. No modifications made at all and it turned out awesome.

I love this but it never cooks all the way. I found that the only way for it to be completely done is when you add the rice, follow the timing on the back of the rice package instead. Great taste! I've made it as a side and as a duck stuffing. (even in the duck it was undercooked)

the rosemary really gives it a nice taste and I added more nuts for decoration, they looked nice and made a nice crunch at the end.
