If you prefer, you can stuff this mixture loosely into a bird to bake rather than in a separate dish.

My original dressing seems to satisfy people who prefer dressing made with bread and those who prefer a rice variety. It includes both, plus spinach and a hint of orange for unexpected surprises. Leftover dressing (if there is any!) reheats well. -Gloria Warczak, Cedarburg, Wisconsin

'Although it uses many of the same ingredients found in typical stuffings, my family enjoys this version because the wild rice provides a different texture,' shares Edie DeSpain of Logan, Utah.

Seasoned with sage and tasty pork sausage, this filling rice casserole is a hearty accompaniment to roast turkey, chicken or duck. I especially like the crunch that the sliced water chestnuts add.

Here's a fun way to jazz up wild rice. Soy sauce and chicken bouillon add plenty of flavor, while celery, mushrooms and water chestnuts help dress it up. 'My husband and two adult children love this delicious side dish,' comments Joyce Bodle, Enumclaw, Washington. 'It's convenient, too, because you can make it a day ahead.'

Chock-full of mushrooms, celery and green onions, this hearty side dish is an ideal accompaniment to cool-weather meals. Our Test Kitchen staff seasoned it with garlic, thyme and rosemary so it complements nearly any entree. Plus, it makes a big batch, so you can use the extra in the next two dishes.

AS A graduate student, I'm always looking for fast, nutritious dishes that cost next to nothing to fix and have a minimum of cleanup. The pilaf is fantastic with fish or poultry and especially compatible with turkey. Since it's so colorful, I like to think it makes my turkey 'dressed for the holidays'. -Erica Ollmann, San Diego, California
