My husband has always hated traditional stuffing, so I was excited to try this. I made it for Thanksgiving dinner, and the whole family devoured it! The sizing seems to be way off, though - I calculated it for 12 people, and it made at least 3x the amount that would have been needed. I also added a couple of cut up apples, because I always think stuffing should have apples.

I'm not a big fan of rice stuffings normally, but since my mom is allergic to wheat (and most other "normal" stuffing ingredients) I tried it. It was really really good! I will definately make it again.

This is a fantastic dish. I made it for Thanksgiving in place of bread stuffing. I used vegetable broth in place of chicken broth, but everything else remained the same. Will definatly be making this more often and for a Thanksgiving new tradition.

As written, a bit salty. Next time, I would use low-sodium chicken broth. Left out the mushrooms.
