This is an extremely easy recipe, and fabulous tasting, too. I have been making it for over 6 years and we never tire of it. It's rich, and warms you up on a cold winter day.

My recipe uses a product native to the north-central United States, wild rice. Wild rice is not a rice at all, but rather a grass seed. It was a staple in the diet of the early American Indians and remains a favorite today because of its crunchy texture. This dish is especially good served with poultry.

Chock-full of mushrooms, celery and green onions, this hearty side dish is an ideal accompaniment to cool-weather meals. Our Test Kitchen staff seasoned it with garlic, thyme and rosemary so it complements nearly any entree. Plus, it makes a big batch, so you can use the extra in the next two dishes.

'I tasted this thick and hearty soup at a food fair I helped judge,' writes Kathy Herink of Gladbrook, Iowa. 'It didn't earn a ribbon, but I thought it was a real winner. The original recipe called for uncooked wild rice, but instead I use a quick-cooking rice blend.'

'We often eat easy-to-make soups when there's not a lot of time to cook,' relates Lisa Hofer of Hitchcock, South Dakota. 'I replaced the wild rice requested in the original recipe with a boxed rice mix. This creamy concoction is now a family favorite.'
