We have a Kitchen aid 5 Qt. mixer. This made the mixing process easier. These little guys turned out like my mom used to make. This originally comes from a German background(Pennsylvania Dutch). Very good texture. I empathize with the other reviews. The wafers are bland and only go good with a sweet filling. That is how I remember it when I was a boy. My mother knew that I stole one because her count didn't come out even. Great recipe.

I just made these tonight and they are fabulous! The made perfect round cookies that were moist and delicous. The cream filling is wonderful. No shortening that would give it a heavy greasy taste. There was plenty of filling to fill each cookie generously. I used a small ice cream scoop/disher. The size about 2 tablespoons. This made about 3 dozen filled cookies. I will be making these again!

I tried this out and it completely failed. By the third oven batch, the batter had begun to separate and a thin, white layer formed along to bowl. The cookies that did turn out had no flavor. I double checked that I had all the ingredients mixed correctly, but that was not the culprit. I've never had to throw out cookies before :(

I liked this recipe for it's simplicity. I use dutch cocoa powder it gives a richer "chocolatey" flavor.
